Pasilla chili is native to Mexico and is the dried form of Chilaca. With the Ancho chili and the Mulato chili, it is part of the ” Holy Trinity” of Mexican dried chili and is one of the irreplaceable ingredients of the well-known “Mole.” Its name means “Dried raisin” and while small it has neither the size nor the popularity, on the contrary it has the same taste as this small dried fruit. Not very spicy, it exudes a good cocoa flavor. Once rehydrated, it can be used in soups or marry with duck.
